Wild rabbit (ウサギ, usagi) includes the Japanese hare (ニホンノウサギ), found across mountainous regions of Honshu, Shikoku, and Kyushu. Rabbit is the leanest gibier option — high protein, very low fat — and is increasingly appearing on kaiseki and French-Japanese restaurant menus. Hunting is strictly seasonal and regulated, limiting commercial volumes. A handful of certified processors handle rabbit alongside other small game.
